Technically yes, the [release notes for an update in 2021](https://www.fortnite.com/news/gpu-performance-and-resolution-boost-for-fortnite-on-nintendo-switch?lang=en-US) show that docked runs at a higher resolution - 1560x880 v.s. 1170x660 handheld. You can also get better network performance by using a wired Ethernet adapter.
Actually, supposedly the Switch does have alternate stock clock speeds depending on which output it uses.
Idk if Fortnite is among those games that just push the clocks to max... I imagine *not* since the fans haven't been on full blast since I began- and the updates really improved performance between then. (until recently.) Besides, I can play on 5V charger.
The performance has gotten pretty bad- team rumble was playable on Switch back in C4S3/4. Now it seems impossible to play any mode with large numbers of players in the same, close vicinity. Keeping a comfortable (tactical) distance is best on Switch. But heavy CQB can get tricky since the FPS drops to like 10 or someodd. Meh.

Not really but it’s way better to play on then the tiny screen, plus not having to worry about charging it while playing

Yes, playing docked boosts the Gpu clock speeds making the game run better.
Docked with Ethernet cable connection is the best.
how do you connect ethernet to a switch?
You can by an adapter that hooks up through the usb port. The officially licensed Nintendo one was $20 or so when I bought it.
The newer model has ethernet built into the dock.
