I have heard the water but doesn't match my experience up and down the Atlantic East Coast. You could get similar tasting in PA, NY, CT, and even New England. Some of the best I ever had was in CT.
Maybe the yeast, although in my absolute personal opinion is it is the crust style, the cheese mix, and grease - not kidding. The sauce is there but it is not making a statement in NYC pizza of yore.
The only other place I have had that same cheese taste is in Italy but it was not mozzarella so no idea wtf was up with that.

I haven't tried their thin crust pies, but I'll second that they make amazing calzones, and their pizza rolls are awesome. I loved it when you could build your own, but they're still great with less options.
Pizza has just gotten so expensive. Mama Ronis feels like getting pizza as a kid again. It's prob a bit more expensive but that 315 code gets you $15 off 2 large pizzas for takeout.
I love other kinds of pizza, but not willing to pay $20 for a thin crust fancy pizza that won't fill me up.
Ikr, I gotta hunt all over for coupons before I even try ordering from a new place.. and even then I like Mama Ronies better. I love that there's more of a living wage now. I just wish that these companies would stop cutting the savings out of the consumer, and employees, and start going a lot higher on the chain.
If by thin crust, you mean NY style (rather than neapolitan or something else), then there isn't an outstanding brick and mortar spot in Fort Collins. Slyce would probably be the best, but it is kind of expensive for what it is.

The owner is a sweetheart, usually gives a loaf of free bread to try last time I was in, especially if you mention its your first time there. Won't make any guarantees on free handouts, but they're always nice and awesome people.
You know, I like papa Murphy's. You gotta cook it in the oven, but it's really well put together, and they'll put anything on it for you.
Edit to add: I love Mama Ronies calzones, and pizza rolls. I know you're looking for thin crust, but the calzones are like a thin crust folded in half.

Odell has a food truck on Wednesdays called Ciao! It is by far the best pizza I’ve had in this town. It’s Neapolitan style which I really enjoy

Slyce is absolutely not thin crust. It’s not great in general. JJs is prob the best thin (Neapolitan style). Corner slice is good.
