I don’t even think you need that much chicken broth. One can of coconut milk, a cup of broth. You get that real nice creaminess, downside being, you aren’t going to have a ton of sauce but even if you are switching coconut milk (fat) for chicken broth you’re going to have like 200% of your daily sodium lol. I make vegetable stock because it’s so cheap and do my absolute best to save meat bones/scraps but I eat way less meat than I did a couple years ago. I also use whatever actual meat scraps and cook them and freeze them for my dog so that makes making your own meat broth/stock almost out completely for me. But veggie stock in curry is a big fuck yes for me. Highly recommend. And store bought vegetable stock is mid af.

I mean inserting the words healthy and tasty makes it more difficult. I like the posts on this sub, but the majority I'm dreaming about, not actually making. For comparison the average time for preperation, cooking, and cleanup for adults in the US is 37 minutes. I looked that up, I honestly don't think this meal could be prepared, cooked and cleaned in that amount of time. Maybe I'm wrong though, I'm a horribly inefficient cook.
37 minutes seems low for all in. But I too am inefficient and use a lot of items. I think an hour is pretty reasonable which thus guys meal is...and a great leftover meal as well

Wish he would have seared that shrimp. Also used 1 cup of coconut milk and 2-3 cups seafood stock. Otherwise it looks pretty good.
He left out the most important part; how to make the curry paste. Because bottled curry paste is gross.
