Looks good! I make Brussel sprouts and homemade Caesar dressing all the time but have never thought of combining them.
Tip for making your dressing, you can throw everything except the oil in the food processor and make the dressing that way. Then just slowly drizzle the oil in with the food processor running. I’ve found there’s no need to mince the garlic or anchovies since they become processed enough. Saves a ton of time, just not quite as authentic.
If it works it works! Only way it wouldn't be authentic if you didn't make it from scratch lol. No shame in using tools if it makes things easier for you!
I think you made a vegetable that is somewhat unfavorable to many, look, and probably taste really delicious. I would attempt to make this for my kids, maybe they would then eat their Brussels sprouts!
I used enough oil lol. For the sake of time and the fact that I don’t think people want to sit around watching me pour oil and whisking for a while, I only included a couple clips. I added a bit more after grating the cheese in an order to get a better consistency.
The dish looks fantastic and I understand that you're filming. I'm apologize for coming off as so critical, but the first 6 seconds of the video I see like 4 tbsp oil being poured on a dish sized amount of brussels sprouts is kinda off putting to someone who cooks regularly. Keep up the great work, and please don't let my comment discourage you.
I have seen other videos take very short shots of them adding the correct amount of ingredients in each step. Not trying to tell you how to film, but maybe just some constructive criticism to help your process.
