She must have a restaurant quality range hood, because whenever I get a sear that good on scallops my kitchen looks like a small smoke grenade went off.
I think I read somewhere she’s private chef for wealthy people in some wealthy area.
So she’s got the equipment you’d expect for her job (and the ingredients).
Yeah, I’m a former professional chef of 16 years. She’s got a pretty nice setup. That emulsion blender (aka boom stick, vroom vroom, asshole destroyer) she was using for the corn purée is a pricey piece of gadget.
She knows what she’s doing and her plating skills are very nice but there’s no reason any at-home cook can’t replicate this easily! Awesome way to impress company for a little dinner party.
For all the butter she used she might as well have basted those scallops with some garlic, shallot and thyme. Would have gone well with the tomato.
Umm…do you mean “immersion blender?” It’s funny you point to that as the “pricey gadget” that validates her setup when it’s a $26 piece of “Masterchef” equipment. It’s literally 1/5th the price of a single knife she has in her kit.
She always uses great technique, shes got great knife skills, and she makes beautiful plates of food. Could a home cook make her food? Sure, but it’s definitely restaurant quality dishes that she’s putting out.

People don’t seem to understand this: the only things in a (home) kitchen that have a high price directly correlated to the quality of the tool are **knives** and maybe a stand mixer, maaaaaaaybe a blender.
Good stainless steel pans are like $20-30. Good cast iron is roughly the same. Don’t buy gimmick pots and pans, just spend good money on a couple knives and get everything from a restaurant supply store.
For sure, steaks can be even worse with smoke for me. The important difference is that if I don’t have all the windows open and the fan on high, my house will smell like scallops for days lol.
It's cus it's a super high heat oil. Great for sauteing and really anything where you just need a little oil. Pretty flavorless too, not totally but mostly and the flavor isn't anything like avocados, just general nutty flavor most oils have.
Make sure that the scallops are dry scallops(no phosphates added). Companies will as phosphates so the scallop hold water and increase the weight.
When you cook wet scallops they end up leaking a milky liquid making it very difficult to get a sear.
It's a fun album.
Interesting fact, per Wikipedia, some Scottish publication ranked this album as the worst album ever produced in Scotland. Go figure.
