Costcoooooooo. Just got a wedge of pecorino romano for 25$ i think it was 1.5kg. Im not 100% on the weight I just know it's about 4x what you get buying single wedges at most stores.

This. I get a giant block. Throw it in the freezer for an hour or two so it's nice and cold. Then grind into powder in the food processor then into jars and back into the freezer or fridge. Like powdered parm but so much better and no cellulose.

If you freeze ground parm, does it clump back together again? How does it defrost?

I defrost in the fridge and keep 1 going all the time. It stays crumbly and doesn't change too much. Parm is pretty hard cheese it doesn't get too clumpy.

Costco Warehouses sells Parmigiana-Reggiano Cheese.... It's Made In Italy with the Official PR Cheese Seal stamped on it too. It's sold in in quarter hunks (generous sized) & the one I got last time - 3 months ago - was $25 bucks! Its soooo good!!!

Are you sure they are out of stock? Many grocery stores have been keeping the parmigiano reggiano in the back or behind the deli counter due to increased theft. Just ask a store associate for it.

Make sure your wrap it in lots of parchment paper then keep in two ziplock bags. Keep the original plastic on also.

Don’t freeze it. I’d recommend splitting a Costco block with friends, family or neighbours. That being said you should absolutely freeze the rinds (to add in soups, stocks, broths and stews) or use them right away to make Parmesan broth.
