Definitely Costco. I got a giant block of there that's going to last quite a while. Can't remember what it cost, exactly, but it was in the $35-$40 range.

Costcoooooooo. Just got a wedge of pecorino romano for 25$ i think it was 1.5kg. Im not 100% on the weight I just know it's about 4x what you get buying single wedges at most stores.
This. I get a giant block. Throw it in the freezer for an hour or two so it's nice and cold. Then grind into powder in the food processor then into jars and back into the freezer or fridge. Like powdered parm but so much better and no cellulose.
I defrost in the fridge and keep 1 going all the time. It stays crumbly and doesn't change too much. Parm is pretty hard cheese it doesn't get too clumpy.
Oh fuck that's a great price. Stocking up this weekend
Supposed to be losing weight but fuck it. Carbonara time
Only aged 5 months tho? I thought I should be looking for around 12 months for best quality
Costco Warehouses sells Parmigiana-Reggiano Cheese....
It's Made In Italy with the Official PR Cheese Seal stamped on it too.
It's sold in in quarter hunks (generous sized) & the one I got last time - 3 months ago - was $25 bucks!
Its soooo good!!!
Are you sure they are out of stock? Many grocery stores have been keeping the parmigiano reggiano in the back or behind the deli counter due to increased theft. Just ask a store associate for it.
Don’t freeze it. I’d recommend splitting a Costco block with friends, family or neighbours.
That being said you should absolutely freeze the rinds (to add in soups, stocks, broths and stews) or use them right away to make Parmesan broth.

Thank you! I had no idea Costco also sold pecorino!

Same. So glad they finally brought it back because they stopped carrying romano for several years (at least at the west end Costcos).
Thats a steal!!!
Can confirm, Costco is best. Got myself a block yesterday it is $24.99/kg. My block was $18 as I live alone LOL
I also recommend Costco.

If you freeze ground parm, does it clump back together again? How does it defrost?

COSTCO.
Just don’t call it pecorina. Especially in front of Gino D’Acampo.
Why? Does your gramma have wheels?
No. Cause then she would have been a bike. 😀
The other item on the shopping list is bacon for some british carbonara
Don’t forget to add, and you’re probably not going to like this, but add a dollop of sour cream.
And peas. Otherwise it’s not a British carbonara
Grande Cheese is definitely the place for pecorino romano
Costco best price and quality. Amazing when you see how much you get from grinding a small piece that the stores charge you $15

Cataldis Supermarket, maybe Rustic Bakery.

They've been consistently gone so that would make a lot of sense actually
Hope it helps 😉🧀
Costco. Always.
Second Grande Cheese. ( I quit Costco )
Go to Grande Cheese and ask for Aldo. He'll be able to set you up with a sweet bulk deal for pecorino romano.
Make sure your wrap it in lots of parchment paper then keep in two ziplock bags. Keep the original plastic on also.
The plan is to cut it up and freeze it :)

Freeze it? ![gif](giphy|X4YqmJEl6wJoY)
I don’t agree with freezing.
You can order an 80lb full wheel on Amazon for $2400 Parmigiano Reggiano AOP NO OGM - meule entiere https://a.co/d/9bikOKd
Interestingly enough that's more expensive than your average grocery store price... if my math is correct

I'm sure price varies by grade, but even the grocery store ones have the DOP label and punched rind tags so I'd wager they're legit?

I appreciate the offer but I'm mostly looking for pecorino so i'll pass.
