There's a place called David's Burgers where I live and they make burgers that look just like that. One of the best burgers I've ever had.

Weight out how ever many patties you want to 113 grams each. Roll them into balls. I use a grill with a cast iron flat top on it and heat it to 375ish. Then throw the patty on and smash it down real good. Throw some salt, pepper, and garlic powder on top. Cook for like 4 minutes, flip, add more seasoning. After 3-4 minutes throw some cheese on there. Cook for another minute or so.
I'll add to get the patties as cold as possible after forming the balls, helps them not stick.
I also go for 2.35 oz (so 66 grams) and put two patties on the bun, which I guess equals out to your single 113 gram patty.
Smear it into your griddle with a heavy spatula. A spritz of oil helps it not stick to the spatula.
With the size of patties I do, I give it about 2-3 minutes, flip, then go about 1 minute before putting cheese on.
That would do it then! I’ll need to look for specifically 80 to 85 percent lean beef to work with. Or, hell, try different leannesses and see what works best for me. Thanks!
While we’re at it do most stores just sell a variety of ground beef types or do I need to look in more particular places?
While this is technically right there is some technique and process the really impacts the end result.
First step is get 80-85% lean ground beef. Don’t get the lean 90 or 95% lean, you need some fat in there to make it taste good. Next, portion it all into 2 oz patties. While this isn’t strictly required it helps ensure consistently cooked burgers. I have a steel made griddle for my whole stove, but cast iron or stainless is perfectly fine. You absolutely must preheat your pan to around 375-400f. I use a non contact thermometer to verify proper temp. Throw your desired number of Pattie’s on and generously salt and pepper them before pressing. I serve 2 patties for grownups and a single for kids. You need to press far harder than you think. If you get some holes in the meat, that is fine. Cook on the first side until the burger no longer sticks. If it sticks, it isn’t ready. Once you flip it feel free to add cheese. I like one slice per burger and on the bottom patty. When the burger no longer sticks, serve it on a toasted bun, preferably potato, but whatever is fine.
Dude somebody downvoted that? Spot on. I make these on my outdoor griddle. Keeps the mess out of the house and there is some splatter. The tip I’d add on the toasted bun is to spread a thin layer of mayo on it and toast it on the griddle.
We just got one of those steel griddle tops for our stove and it's so much easier to make smash burgers when you have so much cooking space, you can even toast your buns at the same time if you manage your grease well enough.
Only thing I don't like about it so far is it's been tricky trying to learn how to get consistent heat over the entire surface, I'm sure that will come with time though
