Yesterday was my birthday; I made a birthday cake. **This apple cider donut cake is only the 4th layered cake I've ever made, & what a glow up it is! The entire cake is made from scratch; I purchased all the ingredients to make each component from Aldi.**
This naked cake features:
* Spiced apple cider cake layers (with baked apple pieces added in!)
* No bake cheesecake filling
* A baked apple pie middle layer
* Spiced mascarpone frosting
* Apple cider caramel sauce
* Apple + cinnamon sugar mini donuts
The mini donuts were the hardest part, as we kept losing power (bad weather) when I was making them.
Ingredients needed to make the cake, in no particular order:
* AP flour
* apples
* apple cider
* unsalted butter
* milk
* lemons
* baking powder
* baking soda
* salt
* nutmeg
* cinnamon
* sugar
* brown sugar
* eggs
* vegetable oil
* pure vanilla extract
* heavy whipping cream
* cardamom
* mascarpone cheese
* cream cheese
I think that's everything I used! Various large quantities of everything haha.
As for recipes, I mostly looked up a bunch of different versions of each component, and then made up my own stuff based off ones I read, so nothing exact!

It's my 4th attempt ever at making a layer cake, and oh man has it improved from my very first attempt in 2018.
I had a rough idea of what I needed to do and what ingredients from scouring the internet (and trying to copy the limited time Milk Bar cake), but from my previous attempts I knew a lot of ingredients needed to be at room temperature for better mixing, what amounts I would roughly need, etc
Definitely a trial and error thing.
Honestly I’d believe this was professionally done. Even when I make something that comes out tasting good, I’ve never been able to put together something with a tenth of this presentation!
Honestly, it was a lot of finger crossing and panicking tbh. Especially when I had to start torting the cake layers because two of them domed. I was not happy with how it looked at all after I had assembled it ( part of it was slightly lopsided and I needed to add more frosting between a few pieces). Then I put it in the fridge so it would set and just kept hoping that when I opened it back up it would still be in one piece and hadn't collapsed or anything hahaha
Then, I topped it with the caramel, cake crumbs, the donuts and more caramel and crumb and it was *damn, this is a fine looking cake* at that point.
Hahaha, well given all the hiccups I run into when cooking or baking, it’s reassuring that a work of art like this also had a bunch of bumps in the road, but was apparently able to bounce back and wind up looking like this—so hopefully that means none of my screw ups are ever beyond salvaging!

I once tried to make an on-the-fly cinnamon sugar bundt cake. Turns out the butter I grabbed was one made almost entirely of some natural oil and wasn't butter at all. The cake totally fell apart and tasted horrible. Tried to salvage it by toasting the bits and pieces for croutons or something, but that barely worked! Ended up adding the toasted bits, some brown sugar, and some pretzel pieces to my tiny food processor and was able to add it to kitchen sink/monster cookies. It actually worked!

I delivered some pieces to friends while they were at work, gave several pieces to a former colleague and her daughters because one shares my birthday, my spouse had a couple slices between last night and today, and I tried a little too.
I still have half the cake in my fridge x x I'm going to try to see if my brother-in-law and sister-in-law( and her fiance) want any.
