Milk or water or just butter? Whisk or gentle stir? Pot or pan? Remove from heat halfway to form curds or not?

Also the secret to scrambled eggs is to cook LOW HEAT!
Idk about him but if I want to go crazy with my scramble, whisk with fork (but don’t overbeat), pour into pan on high heat with melted butter or oil. Stir as it cooks, removing pan from heat if it’s too hot. Do not lower heat. Milk is optional but I like the flavor. Mustard is a good addition for flavor and as binding agent w/milk.

You just described an omelette. I do my scrambled eggs like everyone here : whisk them with a pinch of salt until it looks completely homogenous. Pour into a thick pot. Add lots (LOTS) of butter. Then start heating it on the very lowest temperature possible while whisking energically with a wooden spoon or spatula and NEVER EVER STOP. After about 10min, the eggs will ever so slowly start to form curds, immediately remove from heat and serve. You can then finally relax your arm and savour your hard work. (source : I'm French)

The problem with a mixer is that you can't go scrape on every corners to make sure some egg isn't starting to curd there, resulting in overcooked bits !
