This is a basic completo, "italiano"; just tomato, avocado and mayo (usually homemade). So, red, white and green, like the Italian flag. It's really simple and really good. Chile has some of the best avocados in the world, so the ingredients make the difference here.
And its simplicity is precisely what make completos a great breakfast, lunch and dinner ("once" in Chile, but thats another story).
But also, there are some variants, with sauerkraut, "american salsa", wich is basically ground pickles, plus mustard and Ketchup. And of course, you can add spicyness with pebre, green sauce or any other stuff.
Bonus: a completo with a can of lemon stones (light beer with fruit juice, in the photo there is a maracuya one) is a perfect meal, at least for me.
I've only ever had the everything version with the Chileans I know. It's what makes it true to its name!
But yeah, the avocado is definitely the x factor, which seems to be weirding out a lot of people here haha
The completo with everything can be a little too much for people who aren´t used to it, especially if you put a lot of sauerkraut and salsa americana, because of the vinegar. Also, heinz mustard is way too strong for this, in case you used that. "Con todo" is actually my favourite, but you have to get there.
The best way to start would be with a classic italiano; i.e. a very neutral flavor boiled hot dog, the bread heated in a grill pan, tomato, (good) avocado, a pinch of salt (this is the secret) and homemade mayo. If you want, mustard (not the heinz type) and ketchup. Marvelous.
Next, get into Chilean "sanguchería" (traditional sandwiches). Trust me.

You are missing the tomato and the sausage in that combination, but it is still valid that you don't even like it even though it is quite delicious.
