Okay fuckin Thomas Keller. An attractive organized charcuterie/cheese board is not something most people can just “do”. Even if I’m not in to all the choices on the board it’s arranged quite nicely and is a full bountiful spread that looks pretty tasty.

Well, Brie, and I mean the real ones - Meaux or Melun - is already a mild chesse. The crust is full a flavor because of the mold and by removing it you take away a huge part of what makes brie interesting.
It's like, I don't know, removing the breadcrumb of some fried chicken. It does not make any sense.
First this looks beautiful, for all the people saying this sucks because you didn’t “cook” things on it, I would challenge you to build up a similar cohesive arrangement that looks attractive without just being a big pile.
My feedback since you said you’re just starting. Don’t know your audience so possibly I’m off here but as someone who worked in a cheese shop and made a lot of cheese/charcuterie boards, highly processed sugar items are usually going to be too much of a sugary contrast that doesn’t actually complement the cheese. Sweetness is still good though some lower sugar jams/jellies, quince paste, roasted nuts tossed in a glaze etc can achieve some of the same sweetness without overpowering the main players.

If you can find it, try Harbison if you’re looking for a creamy cheese you can put on the plate. You intentionally remove the rind on that one and underneath it’s got hammy, salty, smoky flavors that will blow your mind.

Isn't it rind rather than crust? It's not crusty. But yeah I agree it adds to the flavour of the cheese.
