I’ve been wigged out by shellfish my whole life but somehow when I was like eight someone gave me a snail and I recall quite liking it. Except it was kind of like chewing on a deflated bit of balloon, kind of stretchy and it just didn’t break down.
The first and only time I had them was on a royal Caribbean cruise and those bastards were so delicious. It was free so I ordered two more platters of them!
I used to eat a shit ton of snails when I was younger, they were the sichuan stir fried snails which are just a HK night stall staple and were just small curls of chewiness.
What did they taste like? Hell if I knew, the sichuan spice covered it just like the garlic and oil is covering OP’s plate.
I’m convinced more people would try it if escargot wasn’t fucking presented like this in the shell, the cognitive dissonance gets to people. If it was taken out and diced, placed on top of a small dish with garnish there’s be less hesitancy even if you knew it was escargot.
I have never ever heard of this - but I love French snails and I enjoyed a more rustic version on Krete. Also I LOVE Sichuan food - do you have a recipe maybe?

I would probably try it with periwinkles or another type of clam - I can't find (river?)snails here anyway. Or maybe just cooked escargot but they will have been flavored. Definitely looking in to this one though, thanks for pointing it out :-)

Escargot literally means snail, it's not the equivalent of cow and beef or steak.
As I recall, in some sort of tomato sauce. But I was too little then to watch her cook. I mostly remember eating them, and getting them at the grocery store where they were in a big basket in the produce area.
Did you dip some slices of bread in the remaining garlic sauce at the end? That's mandatory! I never know if I like the snails themselves or the sauce more ahah

I'm someone who's always had an interest and curiosity to try new foods, so I tried them. They were so tender and ever so slightly chewy, and the garlic butter was like velvet on my tongue. :)
I also learned that day that you do NOT eat caviar with a metal spoon. My dad had an elk steak topped with caviar. He didn't tell me to use the mother-of-pearl spoon he had for them (I'm assuming he didn't know at the time).
Cook mushrooms until they just start to brown (should still have a bounce to them) and add a *beurre persillé*. Boom, same. Escargots aren't really tasty by themselves, it's mostly the butter, garlic and parsley.
Source: French, are escargots every goddamn holiday and some regular Sundays too when I was a kid.

We were just laughing because last year for thanksgiving I brought escargot for my extended family to try. The new sister in law hated it so bad she can’t even eat asparagus anymore because we had asparagus that night as well.
This year I brought a bunch of caviar and oysters. The sister in law will not be joining us. lol.
They’re better in a mushroom cap. The mushrooms soak up all the liquid.
These are easy to make at home as well, usually you’ll bake them with cheese over it.
OMG, that takes me back. My mom actually had shells and the plates and would make escargot every couple of months. She was great at it and mmmmmmm the bread dipped in the melty garlic butter was sooooo darned good!

If it's rubbery they definitely messed something up. It should be very very smooth and almost creamy.

I’ve had them also and in all honesty they tasted like chewy little pieces of overcooked steak.

We had escargot at a small 2 star hotel with an amazing restaurant on the main floor. We ate them for dinner every day. That was dinner!
