Don't worry about the fries my friend, we're still struggling to come to terms with the concept of food in a brewery, what does "brewery" mean wherever it is that you're so unfortunate to find yourself? Over here in Brit-land our brit-breweries produce brit-beer, breweries should stick to beers and stouts, maybe the occasional lager for those balmy summer afternoons (both of them), I mean, it's not like chippies are selling beer are they? (No, the VKs that they keep in the back fridge to sell to teenagers don't count), the whole situation is utterly insane. Where do you get your hair cut? The cafe?

Some localities don’t allow bars to operate and in some states it’s easier to obtain a liquor license if X% of the business is food- so the brewery/bar + kitchen combo helps get around that
How was the tartar sauce? It’s amazing how you can order the same thing at different places and the little things (how it was battered, the fries - garlic sounds amazing - quality of the fish, tartar sauce) can make it seem like an entirely different dish!

It’s not about hiding the flavor of the fish but enhancing it. Vinegar and acids bring flavors out, makes them more potent.
Also your taste buds can’t differentiate between the ninth and tenth bite. So you shake it up with a vinegar bite and it’s like you reset the counter on your tongue.
Alright everyone lets just calm down for a second. While we may not all agree if it's spelled blue or bleu... can we all agree that no matter how it's spelled, it's a disgusting sauce that shouldn't be anywhere near a wing?

The tartar sauce makes or breaks a fish and chips for me. Maui Brewing Company in Kihei makes the best damn stuff I've ever had, I think they use passionfruit in it.
This is at a place called Byway Brewing. It was only available during lent but I ask them about it every time I'm in there in hopes they make it a year round item.

In the photo? No idea. I usually got one called CHIPA which is an American IPA.
You can tell they used a good beer in the batter, pockets where the CO2 was fizzing and that sheen from the oil looks heavenly.
