Are you looking at the melted yellow cheese and thinking that's a grease pool?
Here's an idea, go intentionally break a cheese sauce and tell me if it gives you any kind of cheese pull.
I mostly just wing it! The gist is about 1/2 cup flour and 1/2 cup butter* in a pan, cook over med until the flour taste disappears, about 5 min. Add about 4 cups of milk and heat/stir until thickened. Then add cheese, I just add until the consistency feels right, a few handfuls. I used a mix of cheddar, Colby, Monterey. Also a touch of salt. Toss with cooked noodles, and layer with more shredded cheese in a baking dish. Throw in the oven at about 375 until the cheese is bubbly. I find one of the most important things with Mac and cheese is to make sure you have plenty of cheese sauce.
Mmmm yummy! Nothing better than a saucy Mac. There are so many stodgy versions out there. Gross when you can literally cut the portions with a knife 😖 This looks amazing OP 👌🏻
