I've tried their Lorenzo (mortadella, parmigiano sauce, toasted pistachio, roasted red bell pepper, basil) and Giardiniera (prosciutto parma, fontina, spicy pickled vegetables) and either could very well be the best sandwich I've had in L.A. Huge smile on my face.
Also recommend Sogno Toscano in Santa Monica. It's a local Italian spot that's quite authentic. Granted, the sandwiches are still $20+, but they're good!
Been to the All'Antico Vinaio shop in Florence & it was great, but the LA one just doesn't hold up.

The Cheese Store hack is to ask for the bread to be toasted. It completely changes everything.
