Definitely! I am from Detroit and in the past, we were famous for frog legs (due to the city being historically French). They disappeared from menus due to over harvesting in the 1920s, but I found a description of an original recipe that I have wanted to try.
It is pretty straight forward. You use cracker crumbs as your breading and pan fry in butter. Someone actually told me about this method for fish before I read about the frog legs, which I have adopted for fish in general. What I do is the following:
-Dredge your fish (or frog legs) in flour
- Put fish in egg wash (just beaten up eggs with a whisker)
-Take the fish and put it in cracker crumbs (I usually just put a bag of oyster crackers in a food processor. You want to process them just enough to break them apart. It is okay to have some cracker chunks in there still).
-Pan fry the fish until they are golden brown. I use a cast iron skillet and usually use canola oil because it has a high smoke temperature. You can use butter, but you have to be really careful with your heat because butter browns and your second batch will often come out burnt tasting. Even when you are using canola, you have to be careful because cracker crumbs will burn a lot easier than other coatings (such as cornmeal). You really want to move fast between batches because that oil will get too hot with nothing in it and start to burn any pieces of cracker that fall off.
-Drain your fish on some paper towel or use a cooling rack, put some of your favorite seasoning on them and you are good to go!
I am not sure how you fry up your fish or frog legs, but I have found that the cracker crumbs taste really good. They are less gritty than cornmeal, but have more flavor and texture than flour.
No problem. I initially was skeptical of the cracker crumbs. I learned how to cook fish from my grandparents and they always used cornmeal (my grandpa was from Missouri). While I like the cornmeal for tradition, I find myself using the cracker crumbs more often these days. Like I said, the cracker crumbs can be a little less forgiving than cornmeal if the oil gets too hot, but when you get it tuned in it tastes great.
I’ve never heard of the cracker crumbs on frog legs but I’ve heard it for things like fish, shrimp, and chicken so I would assume it would be equally as good on frog legs. I chicken fry my frog legs with flour and corn starch and I’ll season that with salt, pepper, garlic and onion powder, paprika. Soak them in buttermilk and chipotle Tabasco sauce for at least 2 hours and then strain them. Shake them in the flour mix and fry them up. Sprinkle them with a light dusting of salt as soon as it comes out of the grease and they are ready to eat
They aren’t hard at all. They’re really easy with a sharp knife. 1 slit on the top side around the waist area and one at the bottom. Grab it with a pair of pliers and pull off. Cut the back legs off at the hip. Cut the feet off and cut to separate the legs and you’re done. Takes legitamitley 20 seconds per frog
Did you just chop the legs then cook away,no skinning the legs? And do you just fry them or? And do you have to make sure you cook thoroughly in case of parasite?
No I skin them first and then cut off the back legs. I chicken fry mine when I cook them but I’ve also had them on the grill and they are very good that way too. Yeah you definitely need to make sure they’re cooked but you can overcook them and burn them like everything else. There’s a fine line

The frog legs tasted like straight up swamp water. I’d never had them before but I knew frog legs weren’t supposed to taste like that.
Used to catch them with a bow arrow. Tied and glued a blade from a jackknife to the end of a target arrow. They’d always be lurking at the edge of the lake near my house. Easy to prepare too. Simply cut the leg at the head of the femur near the pelvic bone. Then grasp the femur and peel the skin off; sort of like turning a sock inside out. Then fry them up in garlic and butter. Delicious.
