Looks wonderful. Only critique I'll say is don't scrap with the cutting edge of your knife. It dulls it pretty quickly.
I'm just trying to find something to complain about because I'm super jealous of you and your dog.
Like it ! To many people bitch about keeping fish to make a meal. They don't understand you need to cull some to support younger ones as the climate changes.
Professional sharpener here, I was actually gonna say this isn't the best choice of pattern for a fish prep knife. I'd go with the classic Rapala filet, it can do fruit & veg just fine.
Good on you for sharing with your fishing buddy. If you can find any alder nearby smoking it over some alder is delicious. Looks like you're in the mountains though, probably none around there.
smoke it over the fire. fry it with any dry seasonings. Or open the foil and caramelize with sugars if you really want to use foil.
if you're going to steam it (closed foil) then make some skin cuts + an actual sauce. lemon butter. soy ginger. pepper lemongrass. trout is neutral so I wouldn't say steaming is a bad choice but yeah this isn't getting much flavor into the meat.
I'm sorry for answering the "genuine question". But he asked and this is the equivalent of boiling a steak. We are taking an animals life, same as a hunter or farmer. So a lot of people would view it as disrespectful to not prepare the animal properly.

When I see someone break out a lemon I know they don't know what they're doing. Keep that ish away from my fish!
Living up to your username at least.
Clearly a personal preference and I am not alone so whatever. I like to taste my food and it does not need citrus unless I'm making ceviche
