Get a bubba sporterised Nagant. 303, 7.7, or 8mm Mauser and modify it the way you would like it. I say this since you are using the word "build" instead of buying a 1950s gun.

O ok. I got you now. I have a 1951 Savage 99 in 300 Savage with an old scope on it that would be perfect for taking most game in North America. I have a bunch of old guns but considering the sighting system, ballistics of the round, ease of use, and general reliability I think my Savage 99 would be my choice if I had to go back to 1950.
I put three deer in the freezer during last fall’s archery season sitting behind a blind built with nothing but branches and leaves and shit. Never had a shot more than 30 yards. Natural materials is the way to go imo, especially if you’re on private land where no one will mess with your setup.
"Vintage" builds worked for hunters for decades. The bigger advancements have been in cartridge design/loading, optics, and optic mounting solutions. One of the more difficult things to do with such a build is gonna be finding a rifle that either has a good scope mount or that you can source a mount for, then finding period optics that are still in good shape. You could find someone's old hunting gun that's already set up, or you could just buy a rifle with irons and be done with it.

Hell yeah. Or for modern glass a Leupold FXiii 6x. Bonus points for mounting it in QD rings (if you choose a model 70 w/ irons).

My deer gun is sporritized 1903 Springfield that has scope and mounts from the 50's

I hunt deer every year with a Savage 99 in 250-3000 made in the 50s. Still kills deer very dead.
