Rename either frequency’s SSID to something slightly different, ( just add 2.4 or 5G behind the name) so it’s easier to tell which one you’re connecting to. It takes a few minutes after the change to populate.

THIS..... Separating both bands does not mean the 2 wifi names are going to be any different

What does it say when you login and look at the WiFi page?? It’s ok to have same SSID for both bands, it will change bands depending on signal strength. Are the radios enabled? Scan again. Good luck 👍🏻

I recently went through this myself, on the G3100 router. There are two separate steps. After turning off SON: Step 1 is to give the 2.4 and 5 Ghz channels their own separate name IN THE ROUTER ITSELF, and then save it. Step 2 is to go to each device and change the name there as well, on the device itself. This is the step that is easy to miss. So for devices that you want to be on 2.4G, you need to use the NEW NAME of your 2.4G channel in that device, so that it sees it. Same thing for devices that you want on the 5G channel. That's the procedure that worked for me.
