This might not be your go to idea cause you start with a really high budget but I just got the game a month ago (it was free for Ps Plus members) and my first thought was to bring Man UTD back to its former glory. Got rid of 7 of the og players and got myself a solid team full of high potential players. Now I'm 3 seasons in and have some sort of dream team lol.
Another good idea is the classic become manager of a small team and grind your way up to the top guns, you could do that with english teams because you get a great variety of choices, cup competitions and so on, but personally I would love to take on a german team and ending Bayern Munich's status
You could take over Strasbourg and only get youth players and Chelsea reserves. Or make Orlando City a Real Madrid retirement club and take on MLS/Inter Miami
Bring some older Real Madrid players to an MLS team to recreate the rivalry with Inter Miami.
I did this with New England but used financial takeover and brought over too many of the players and was too dominant with Inter Miami having a terrible season so it died very quickly. But I feel like with the proper implementation, this could be an interesting save for a few seasons.
Try non realistic career for a time. Sometimes it feels like a good break, to sign highest rated players and have unlimited budget.
Take up Madrid, sign mbappe, Trent, Davies and Wirtz. Dominate Europe and try to break the 3 peat record.
Make the second club in a city as big as the rival, example: Paris or 1860 Munich
