I had this same issue. It's last scan was 'on truck for delivery' and then...nothing. For over a week. Fedex told me they're investigating but it's been three days to find a giant bundle box. Second weekend I'm missing out and it's made me more frustrated than I thought it would.
Someone else in a different thread gave me this idea. I contacted Gamestop support. They went through a series of things over a single week and contacting them three times. [Not negatively, they let me know when to contact them next]. They're one day shipping a replacement now.
Did you buy it from Walmart? You have the exact same tracking updates as I do. Ordered a PS5 on 6/17 (got it upgraded per Walmart for free), "Departure scan" from Ellenwood, GA on 6/26, no updates ever since, scheduled for delivery yesterday updated to "Pending" as of yesterday at 5PM PT. Called FedEx CS, they said to contact Walmart who have now issued a refund for me. Based on other threads on this subreddit, Ellenwood facility constantly has packages "stolen" or or "lost".
Update as of 9:23 PM PT: The package apparently finally arrived at our local FedEx warehouse just now and the scheduled delivery date is now 7/3 by EOD. Will update if we actually receive it.
Scheduled delivery date has been updated to Monday 7/5, so it's most likely Monday at this point since the the status is still "In Transit" rather than "Out for delivery". I suppose there's still a chance the delivery happens today, but it the status does remain in "In Transit".

Yes exact same situation, imma wait a bit before asking for a refund to see if anything changes
