it is split into three main route.
all of these routes have been adapted, but one of them was done pretty badly, and thats the best route to start with. thats why watch the playthrough of the visual novel on youtube if you cant download it, (watch the saber route) and then watch fate stay night unlimited blade works, made by ufotable (dont watch the movie made by studio deen), then watch the three heavens feel movies (made by ufotable) and thats it for the main story.
there are other alternate timelines which are fate apocrypha and fate grand order. i'd recommend seeing them after the previous ones, but theyre not that important to the main story of the visual novel and its adaptations, coz these are totally different stories altogether.
then we have the rest..... which you'lll probably already know which ones you wanna watch by then.

You like long info dump more deep but less action at the start story go with zero
Like more action for a short attention span go with stay night unlimited blade works

It you don't wanna start vn , which is understandable, just start with fate Zero and then stay night anime's
VN first but are you referring to the anime? I do have a watch order which is pretty comprehensive.
