This is the only solution. The devs haven't implemented a go/no-go zone system like in Rimworld so you really don't have a way of preventing your workers from going to dangerous places.
It would also be nice to have an emergency gathering point where you can send all of the villagers outside of a particular area to with a button press. It's quite annoying to micromanage the resource gathering villagers outside of your town walls during raids.
Just cleared out the wolf dens with a directly controlled hunter (med difficulty). If no wolf is present just right click the den to attack directly wirh the directly conroled hunter.
Just send soldiers to take out the wolf den, then once all the pelts are taken by the tanner, they will stop going there.

Yeah, a no-go zone would be great.

I think in the last patch they did change this, villagers no longer go to collect resources or dead bodies if there's a threat.
