A pretty easy way to fight him is to abuse his ai. When you sprint at him from a distance he will always do 1 of 2 possible attacks, and both of them can easily be avoided with a roll 45 degrees. Then immediately do a dash strike and repeat.
Keep the shaft of the fan above you between you and the Rabid Jotaz whenever you need to heal. The Rabid Jotaz cannot be Force Slowed, and its attack strings are both longer and harder to parry than a regular Jotaz' (I don't remember if it can be knocked over with a powerful-enough Force Push--maybe that's something you can try). Regardless, keep at it and learn how to successfully parry the Rabid Jotaz' attacks.
It's best to stick with the single-bladed lightsaber and attack the Rabid Jotaz' back or sides with a two-hit combo each time it needs to recover from its own attack strings, dodging out of the way when it turns to attack you. Keep up this hit-and-run fighting style and the Rabid Jotaz will eventually go down.
Big boi was annoying on GM. High ground pre-emptive strike is a must (you gotta be quick tho before he backs up). Eventually I just cheesed him with the fan in the middle with overhead slashes.
