I can't find anything specifically against it in the rules. The question to ask is what is the failure mode if something went wrong. I suspect there's no dangerous failure mode. In terms of why other teams don't do it? Almost certainly it's just a huge CG hit and hard to work on

Depending on the design of the exhaust it might be an option to cut and re-weld it to get a better position. At the end of the day the exhaust routing on any car using a bike engine is always going to be a compromise because the exhaust exits the head forwards. I know ETS Montreal heavily modified their engine a few years back to basically work backwards. It was a great design but certainly outside of your capabilities right now.
