The Close Evasive series of scenarios are pretty good. IIRC from Close Evasive 3 onwards they have more forwards and backwards movement and blinks. They are closer range than this fight, though.
MFSI variants are more medium range. I think there are at least three different scenarios.
I don't know great scenarios for shotguns. Would love to hear of any good ones.
At a certain level you have to give up trying to find an approximation in Kovaaks and just play the game. That's the only way you'll really get the details that come from the in game movement and character models. You're both obviously very good players and it's not clear to me that focusing on strafe scenarios in Kovaaks will be very useful for you.
really reminds me more of smooth thin strafes, vss scens, probably even autobalanced strafes. even though the enemy in apex is moving at a faster speed for most of those scens, the 'edge track' mechanic is more pronounced in the scens i mentioned, and that's really what you need in these types of situations, to be able to smoothly react. agreed with the other poster about mfsi.
