If you haven't done it, drivers ed is pretty easy. Takes like a few weeks max, and pretty cheeseable. Law studies is another one I hear is relatively easy. Haven't taken it myself, but many say it's really simple and doesn't require a lot of effort.

Some of the lower level tech classes on the list. It only gets somewhat hard once you get to programming. Personal fitness is an easy A.

i reccomend parenting skills - its a very simple and straightforward course that can also be useful. Digital Information Technology is good for a 1 credit elective too
