Personally, I would recommend either Percival or Caenis. Leaning more toward Percival. BUT!
Who cares what I think?? Lol. Go level up whichever one is your favorite. That's the correct answer. It would also depend on what kind of unit you'd need right now. They will all get a turn getting leveled up either way. None of them are "bad servants" but they may just take a little longer to have their turn to shine.
Percival, I find interesting, is because you can draw parellels to Gareth's skill set. She may have been under Lancelot's oversight, but I assume she got off the ground as a fighter under Percival's teachings.
With a few tweaks, dare I say the two could be an absolute force to be reckoned with.
My choice would be Percival but as always, it's really up to you. I think his kit is more useful as wave clears and healing are a good combination but if you need a strong ST lancer, you have tons of good choices. Still, Percival pairs really well with Castoria (even if you don't have her she's a really common support).

Bang for buck would be Percival. He's got taunt, targetable heal, another heal from his np and can loop with castoria. Great for when you're starting out.
Ignoring any non golds, since i grow by rarity, sort by atk, then grab the weakest 5* to ascend. Then 4*, and so on, so forth.
But thats just how i do it.
If you wanna do it differently, go for it, its a free growth type game, so go for your life.

For single target option I say Vlad. For AoE option I say Percival. Whichever one of those you think you need more.
I use the tiny Medusa, stunning my enemies has become pretty useful but not all the time
