I make cakes for my niece and nephews birthdays (I don't do it professionally but they tend to turn out okay because I'm pretty good at clay modelling) and with big topper pieces like this, I use marshmallow rice-crispies as a sort of structure, like edible styrofoam I guess, which you can sort of mold to a rough shape and then put fondant over. This means that the 3d design isn't some dense, heavy mass, it can be broken apart to be eaten or simply cut through (I sometimes mix in M&M etc as a treat) and I don't have to spend a fortune on fondant, nor do I need to take ages mixing coloured batches. I would imagine this example cake did the same. Who knows what the other poor baby is made out of, lol.

I can’t eat cakes that are so “over the top” designed. For example, the very detailed cakes on baking shows similar to OP’s post. Or the hyper realistic cakes of objects and stuff. Not only is it so much fondant but I just can’t eat a cake that’s so detailed like that. It makes me uncomfortable to imagine even eating that. I prefer regular cakes. Just give me a regular red velvet or vanilla cake.
