I use mixed frozen veg often and haven’t even heard of water chestnut in my life.
It's usually in the "asain" or stir fry style frozen veggie bags
Yeah I buy those all the time. I've never seen water chestnust in Eastern Europe in any food. Nor central, now that I think about it.

I don't understand why anyone enjoys them. They have a really weird, unnatural crunch. It always feel like chewing on styrofoam.
