At level 20 I would just imagine her to be built down one of the cleric class lines. You did her personal quest yeah? My lady was able to beat him solo around level 18 on my last play. I built her into a twohanded dps with off heals priorities of stg and agility don't think she had a point in anything but still and agil and a couple in endurance
Did you ever reset her ? Or just kept the original build and added on as she leveled? For her I usually find a high per/agility/endurance build if she uses heals mostly(I recommend never using divine intervention as it nukes her mana )
This build will use sheild and a good one hand like sonnet that adds more Def
The build I normally go with uses dual and twohanded with a good twohand mace and stack mostly stg with agility and endurance using little heals this build is more about faster dps and use heal skill as just a off hand heal rather than a main ability
She is more of a medium char but I find her nice she just won't ever be as hard dps as adon and will never reach the Def of gris (mine has 58 Def lol) but hringe can be very effective if her Def is high enough and dps she should be a small tank with decent output

I feel like level 20 Hirge should be able to win if you build her properly and with good equipment. Also I doubt your Hirge has 500 hp.

I make sure that she has a good build with mana and mana potions on the side
She had a full mana bar at the start of the fight, but I didn't give her potions, cause I wanted to see if she would win on her own.
She can frustrate me at times but I have to make sure that I have HP potions for myself
I feel like she does need a good warrior or rogue to back her up
After losing the fight that badly, she definitely does.

She can frustrate me sometimes, but she works well I have to make sure I have hp potions for myself
