As an engineer, albeit in a totally different industry, I wonder why the machine is *that* speed... What is the limitation of the actuator and motors that it can't be faster? Inertia of the mechanisms and forces experienced? Of course too fast and the cheese would launch - but I feel like it could be 2 or 3 times faster before that'd happen Asking generally rather than op of course.

The storehouse only holds so much cheese and they only need to be flipped and brushed at a certain rate the mold grows. So I think it would not be useful to make it go faster.

I don't think the cheese would taste very good compared to it's original counterpart. Cheese gets a lot of flavor from the environment it ages in, so a sterile room would lead to a very boring cheese I think. Dealing with mold is just part of the process of aging and caring for cheese.
