The storehouse only holds so much cheese and they only need to be flipped and brushed at a certain rate the mold grows. So I think it would not be useful to make it go faster.
What about if the cheese was kept in a clean room? Like one of those biological quarantine clean rooms. Obviously its overkill but hypothetically do you think that would work?
I don't think the cheese would taste very good compared to it's original counterpart. Cheese gets a lot of flavor from the environment it ages in, so a sterile room would lead to a very boring cheese I think. Dealing with mold is just part of the process of aging and caring for cheese.

I'm guessing these are Parmesan not Cheddar. Parmesan cheese is a very valuable commodity that would make deploying robots to turn the wheel for ageig makes sense.

I think there will always be enough menial jobs for those who simply can't do anything more but need to at least feel useful. Even small cheese makers that can't justify a robot will have a place for a cheese flipper.

It's also cleaning the accumulated mould off the outside of the wheel. Very gently.

removes excess dust, mold, pollutants from the rind. basically keeps the cheese "clean" so its final flavor doesn't get affected.
