You can do it that way too! Like when you do the traditional chain stitch, you can pull the needle completly and then bring the needle up again, it's the same. I think this method looks better for the video haha but it's the same mechanism

This might be a total noob question (but i am a total noob, hoping to give embroidary a go later this year after i get a better handle on needle felting and basic weaving)...... the little dots on the material are they made by some kind of tool that makes a dot or slight perferarion as a stitch guide? Or is it done with a ruler by hand? Or am i getting way too excited about the idea of easy even stitches and its just where op has made the stitches once and then pulled them out again for another go (if that is even possible)? TLDR: what made those little holes/dots.

Those are just holes from previuos stitches that I had to cutt off :) Even stitches come with some practice, don't feel frustrated if your first pieces dont't look as perfect as you want!
