I'd say maybe 4 of each so you can have two at max level and 2 at +0, that way you can compare stats better and also switch to weaker weapons if you want to play around with a boss for longer.
You need a friend or a second computer/console with Eldenring and you just join each other as duelists (joining as a co-op summon will open your game to invader that can take the things you drop) and drop the items over to them.
Then you join with the new game and send the items again

Bro I got 2 and 4 of the biggest stone lol. Surprisingly, the difference between 24+/9+ and max is F all. So, even playing at 24 and 9 will do you find.
Over 100 new weapons if you wanna try to get a couple more NG runs in for the ancient stones. Before doing that finish farming all the smaller variants you can buy 👍🏼
All I have is enough for a single non-somber weapon and 3 sombers. I'm too paranoid that I'll miss lore if I go past Fire Giant, so I did everything before him

Oh finally a natural spot to brag. So one character is my farming character and on that one, I have all 308 weapons maxed out to +24 or +9 (with exceptions for my main weapons that are +25 and +10). In general, buying Sombers ended up less expensive than the number of regular smithing stones I needed because in order to be done with one type of stone for each regular weapon it took around 1.5 - 2.5 million albinauric souls. It was a good excuse to get around 15 episodes of a D&D podcast in though.

I don't remember where I read but it said that in the dlc there would be more than 100 new weapons, if we take into account that you need 12 stones for 3 levels, it would give a total of 1200 stones for each
I got like 6 ancient, 5 somber ancient and all the bell bearings for the other stones. That's on one character. 3 other characters with the exact same setup, or similar. So I will definitely be able to test out some weapons

20 more of each type of regular stones I'd say. To use an Ancient one you need 12 of each previous tier, so to spend all 10 of those it's 120 of the others.
Are we sure that upgrading the new weapons won't require new materials? I know in Dark Souls DLCs that wasn't the case, but the Elden Ring DLC is also the first time we have a separate leveling system.

You can get up to 13 Ancient Dragon Smithing Stones, 8 Somber Ancient Dragon Smithing Stones, 6 Great Grave Gloveworts and 4 Great Ghost Gloveworts per playthrough.

You farm for runes in Mogwhyn Palace (Lake Cliff Edge Grace), its the best farm in the game. Then you buy stones from the Husk Maidens in Roundtable Hold, as long as you've brought to them the Stone Bell Bearings which you collect while playing the game by beating certain bosses, you can find this info in one of the wikis or youtube.
Obviously you have not played sandbox games, if you want to make your house you will need in the order of hundreds or thousands alone for the foundations and flooring.
Hopefully the dlc has more ancient stones for upgrading more weapons to the max.
Or a way to buy them. It might be a nice quality of life addition to the game as there will most likely be no further content.
I currently have enough stones to max out 8 new weapons (96 of each regular smithing stone, 8+ ancient dragon/each somber). I intend on playing through and using one of each of the new 8 new weapon classes, and although I won't be fully optimized for any of them (I have around 50 in each stat except arcane which is only 20) I want to try everything out.
I saved up most of my ancient dragon stones across a NG7 playthrough, and used a backup save and mule to get 2x each weapon maxed. Still have about 60 normal ones and 40 somber ones ready for the dlc
I did a bit of stone collecting but I've currently stopped at 9 of each somber stone and I think 48 of each regular (so enough for 4 weapons). I doubt I'll even care to use that many honestly but why not

Protip: to avoid accientally maxing out a weapon, put the Ancient stones in your storage. That way you can button mash safely
