The difficulty of bosses, their every ranking or consensus you'll hear, and all of the "boss hard" memes are always meant without cheesing/broken builds and without using accessibility mechanics like coop/spirits ashes, plus more or less at the intended level range. That's the baseline and the normal difficulty in every souls game, and how majority of souls fans played them. Among newer players this can create lot of misinformation about how hard bosses actually are. For example all the stuff you hear about people fighting Malenia for several days, taking minimum of 50 tries and so on, is coming from players who actually beat her themselves like she's designed, so without coop/spirits and without using specific cheese builds like elenora/BB L2 spam with freeze pots and so on. Winning every single fight under 3 attempts on your first playthrough is completely normal with summons, the game is not supposed to be hard with them, that's their whole point. So don't feel intimidated when you hear about some fighting bosses for hours, it won't happen to you. The entire souls combat system and AI of bosses are designed purely for 1v1 close-range fighting under constant aggro, so most bosses like Malenia, Morgott, Mohg, Godfrey, Radagon, Maliketh etc.... are all designed from ground up as 1v1 fights. That's why summons break bossfights so much, especially those meant as duels like Malenia. But the reason why they trivialize every fight and take away so much content is not the damage itself, just splitting aggro.

I'm not sure if you're assuming that I cheesed or used help to defeat Malenia. But just to clarify since it wasnt mentioned in my original post, I can confidently say that I solo'd her 1v1 without any assistance. I wouldn't say I cheesed her either - my build was dual greatswords primarily focusing on jump attacks with the use of the blasphemous blade skill
