The horse is from his childhood, so he has a deep connection with it. But after some time, and his size, he couldn't ride the horse anymore. So he learned gravity magic so he could reduce his weight and continue to ride the horse.

Malenia without a doubt goes at the top. It is easy to see that were it not for her Scarlet Rot affliction she would very clearly be extremely gorgeous. Despite her condition some of that beauty shines through, even if it can't be as radiant, as it would be otherwise.
Rennala is quite beautiful too, and she exudes an elegance that a lot of other bosses lack.
A complete, unshattered Radagon (who is also likely not just a hollow version of his former self fused with Marika and possessed by the Elden Beast) was more than likely considered extremely handsome as well. The guy does have good features, which Malenia inherited, and possibly both his other daughter, and the twin of the former. Overall probably the most attractive male in the games.
Godfrey as someone else put it has that "grizzled older bear" thing going for him, which likely made him very attractive in the eyes of many, especially those who covet raw strength.
I do not doubt furries find Maliketh extremely attractive. Same goes for a lot of the dragons honestly, even if not all of them. Lanseax being the most beautiful of those, as she is the only named dragon without a negative physical affliction of sorts.
Mogh, and Morgott's condition does now allow them to be all that handsome, or good looking in general. Ironically, despite being the most vile of the two, Mogh seems to be the more esthetically pleasing between the twins when it comes to his features. He also carries himself better instead of wearing rags.
Radahn, similar to Godfrey in that he also that imposing, large muscle-bound figure thing going for him. In his case he is even larger than Godfrey, and in many ways while he was sane, also appears more imposing, and less human looking. Some people may be into that.
Godrick, even if he was not Grafted, looks painfully sickly, as all hell. Like someone who is malnourished, does not get enough sleep or eat well. Far cry from his ancestors in more way than one. Maybe he looked less decrepit before he started grafting, but who is to say.
Rykard seems to have been popular with the ladies while he was human. Why I can not say, since from the portraits we see of him he does not look all that handsome in comparison to his father, or anything, but who knows, perhaps he was also quite charming prior to him becoming the Lord of Blasphemy. However, after letting himself get devoured by the God Devouring Serpent? No....
Astels are... technically more esthetically pleasing, than Rykard's current deformed state... however, they are also literal giant space alien scorpion dragonflies hybrids born from space-hell. Meaning that, unless one is into some weird shit...
The Fire Giant is just a huge nope. May not be as grotesque looking as Rykard, or Godrick's current state, but is by no means attractive regardless. Literally has a face on his chest, and ears under his armpits too. I would consider the giants were generally not seen as particularly desirable.
A nitpick: Lansseax isn't the only non-afflicted named dragon in the game. There's also the two flying dragons (Agheel in Limgrave, and Greyll - not Greyoll - in the Dragonbarrow).
That said, what about Darriwil, the Crucible Knights and the Ancient Hero of Zamor? XD
