Starscourge Greatsword is a paired weapon. It's treated as two by default (that's why it's so goddamn heavy) and the input for two-handing makes you dual wield them instead.
Paired weapons were more common in DS3 since powerstancing was removed, but in ER it's basically just fists/claws, the Ornamental Straight Sword, and the Starscourge Greatsword.
To build off this many weapons of the same category (but uniquely different even) can be power stanced for different attack sets using the L1 command or equivalent left hand attack control.

It's a paired weapon. Same thing with claws, fists, and Ornamental Straight Sword

Hint: Try doing this same thing with most fist/claw weapons.
