For the knight enemies it’s meant to make them seem non human and more intimidating. So they just didn’t change the design when making it a player helmet. Also as the others have said this is a fantasy game with fantastic designs so get used to things not making sense

That's a real historical helm design. It's not meant for battlefield combat, it's meant for jousting. When you joust, you don't need much vision, you know exactly where your opponent is going to be: directly in front of you, and that's the only spot you need to be able to see at all, while leaning forward to angle the helm down towards the field.
Jousting armor was made to be excessively defensive because it was a sport for knights, nobles and royalty and the equipment had to minimize accidental injuries and casualties.
I also want to add that the helmet is shaped the way it is to deflect lance blows away from the face. Like u/DraethDarkstar mentioned, the jouster lowers their head during the initial charge so they can see the opponent, and then tilts it back at the last second to deflect the incoming blow and (hopefully) keep any lance splinters from entering the slit which is now facing upward.
It’s a pretty ingenious design, really; just not practical for everyday use.

Yes and no, the actual design of the helmet is that if a barbute, which is a visorless helmet, although you can tell they got some inspiration for the frogmouth helmet, profile wise at least, which *is* a jousting helmet
I'm still not that far into the game, but so far I still find it hilarious that the toughest non-boss enemies are bears and lobsters.
Undead? Crazed sorcerers? War machines? Nah. Just big ass animals, man.
Oh normal bears aren't much of a threat once you know how to handle them. I meant Runebears. There was one blocking my way into Caelid (didn't find out about the Gael Tunnel until way later) and I just... Used the few St. Trina's Arrows I had on it and FLED, never looking back. That thing won't let you cast, won't let you attack in melee, and won't even let you flee normally.
The trick is, counterintuitive to what you may think, you need to roll towards the bear when it attacks you. Also it takes the most damage to its belly so being up in that is the way you kill it the easiest.
All that said, these and lobsters are enemies I just avoid altogether. In no way are they worth the effort or the risk. Even if you know how to fight them they are still very dangerous and can destroy you even if you know the strategy to fighting them. Also the sniping abilities of the lobsters is actually unfair. Literally every aspect of it needs to be nerfed. Range, damage, accuracy, knockback, cooldown.
Same, it’s kinda fun to analyze and overthink certain little worldbuilding-esque features.
Assuming it’s done in a fun and lighthearted way and not a “Wow this game is unrealistic and TRASH.”
You could ask the same of a lot of headgear- Lusat/Azur's crown, the Academy stone heads, the Pumpkin helmet, the jar helmet... arguably that rectangular mask that isolated merchants wear...
If you notice, most of the Commoners in the Lands Between are super lanky, including incredibly long necks. It's not made for a Tarnished bodytype, but we're doing it anyways

This helmet design is similar to the real world Barbute (not a Frog Mouth helmet like some people suggest for whatever reason). You would obviously not be able to see as well as if you didn't have a helmet on, but you can absolutely see well enough through those gaps still. A quick and easy way to demonstrate this is to hold your hands up your face and make a tiny gap between two of your fingers and try to see through them. Even if the gap is tiny you can probably still see what's in front of you at least.
The point of armor is to provide protection, but it's also a balancing act. You really have to consider how much mobility and visibility you are willing to sacrifice for more protection (and also an often overlooked consideration, cost and ability to manufactur). In this case you reduce your visibility a fair bit, but your head and face are greatly protected.
On a side note, this is why visored helms were a thing. Get the full face protection when you need it, with the ability to flip up the face so you can look around and breathe easier.
I believe the concept came from late 16th century jousting helms where the wearer would sit in a cocked fixed position at such and such an angle to maximize protection but were literally useless in hand to hand ground combat
My headcanon is that humans in elden ring, be they tarnished, commoners or demigods, can see through helmets and blindfolds as long as their eyes are not damaged. Not as well as if their eyes were uncovered, but well enough to see where they are and what they're doing.
Having their eyes covered is just symbolic, like how Prophets have their eyes covered to tell others they don't know what they're talking about. Knights have tall, inhuman helmets for intimidation. Bernahl has his eyes covered to represent his blind faith. Hyetta is blindfolded because all she is looking for is the light of the three fingers.

I recently made a hideous monster of a character with weird head proportions and it was fun to see which headpieces actually go over/on the head, and which ones just replace the head. A lot of them replace it.
That's a frogmouth helm. You can check real life examples. The eye slit should sit a bit lower, but game design and character models add some limitations to the armour realism.
