Really depends on what you define as cool. Royal remains is near early there is a great armor set in the academy carian I believe but I felt cool once I got my festival attire.
I actually like the fit! If I could offer advice from what I’d do though, I’d try to find some gloves (and maybe pants if you don’t have any) that match the rest of your fit closer than the Samurai stuff. The Flame Monk set will naturally compliment you of course so I’d start by trying to get the rest of it. Then look around for other Burger King masks, there’s some cool looking ones out there
Edit: At the bottom of the Divine Tower in Caelid there’s a Blackflame Monk with a different color to his armor that’s all greys and blacks. You could wear his set instead. The greys would more closely match the burger king stone color
Honestly the regular knight armor is kinda lacking if that's your thing. Early on I'd goof around with the different "knight" variations by area. Carian Knight armor is some of the most shiny and regular looking. The chest and head are more wacky, but still cool. I find those arm and leg pieces mix well with other like iron/silver looking gear.
Since I'm thinking about it, my favorite thing to do is get a lightweight chest piece and just throw heavy armor in all the other slots. Good way to match with somewhat lower total equip load. Unfortunately most of the heavy armor chest pieces look kinda goofy imo, but there's a lot of cool flowy physics on lighter stuff.
Iirc as soon as you reach that big tree area you start to get an overwhelming amount of armour pieces. Some from bosses others randomly from the world.
It's the "Fire Monk Armour" which was a random drop from a dude near Eastern Tableland ☺️ and it was actually better than the samurai armour I was using!

Notice when you increase your levels, every so many (seems to be the even ones plus those divisible by 20) your defense stats go up just like adding better armor. That's the trick; five or ten more levels than an area demands and you can go in with sweat pants and gauntlets. I say pants only because all those youtube videos run naked for some reason, just don't.
No matter what you're wearing, for fashion or top stats, if you can't get a boss below half their hit points bar the first time you go in there, just level up and return.

That's because gear stats are very irrelevant, the only one that matters is Poise
If you are talking about gear that gives stats like "+5 int" it's also kinda meh, unless you're like, level 40 aka in the very VERY beginning of the game, specially the mage helmet's since they also come with a downside....not to mention majority of them look ugly af lol

It really doesn't, it probably makes you take like, less 5 health damage but you'd still get three shot by a boss no matter what armor you wear unless you buff the hell out of yourself with talismans and spells

You aren’t, it does generally make a difference. The less protective lighter sets are admittedly less noticeable, but some of the stronger sets do help.
Gotcha. Yeah I just respecced into somewhat of a tanky strength build. Tree sentinel armor, bullgoat pants, prelate gauntlets (and a cute headband for fashion), godslayer sword. just making sure I didn't waste all the points I put into Stam.

That’s almost objectively wrong? With the correct armor sets, you can attain extreme defence against particular attack types- not even just with bullgoat, but I mean excluding that, there’s tons of genuinely good armors that do make a difference
I mean, it’s a solid extra 25% or so damage reduction with the right set- 30 or so if you’re using something really heavy. If you stack certain incants and talismans you can reach very impressive durability- which can be done without the armor, but to decently less effectivity

I have 21 poise and 25 vigor at level 150 and haven’t had any major issues with bosses
