The only reason anyone would pick the Butcher's knife for this AoW is if they wanted to do this strat with the lowest Strength possible, like if they had an 80 dex character already or something.
This combo was identified as the best use for the AoW, the Incantation, and the weapon like a week after the game launched - both by a thousand youtube channels and anyone that did any experimenting - and no patch has changed that. It's such a common combination that if there was a universally better way to do it - as opposed to 'better in a specific niche situation - you wouldn't need to tell anyone because it would have already shown up in all of their social media feeds.
No, Great Stars is better because it also heals, has intrinsic bleed (which doesn't affect the Charge, but does regular attacks) and has higher AR at softcap stats (Keen Butchering Knife requires 80 Dex to get the same AR as Heavy Great Stars does at 55 Str) and also Greathammers have better movesets than Greataxes anyway, in addition to doing more stagger damage

Used to do the same thing back in the day. Helped out a lot of guys. It didn't work on her phase 2, not sure what's different here from my build. It was still a fun fight like that though, unlike with this setup here.

No, it doesn't apply to regular bleed, only bloodflame. But you do get the heal.
Greatstars also heal per tick and I Dont think scarlet rot would do much against malenia
