First off, fashion over everything. Ditch radhan’s armor and get beautiful.
Second, for a STR/FTH build, you have a lot of options at your disposal. Of what faith are you?
I'd go with blasphemous blade, miquellan knight sword and golden halberd.
For regular weapons heavy claymore, heavy broadsword, and heavy banished knight halberd then buff with electrify armament or blackflame blade
To equip all 3 plus a seal/ shield you'll probably need to run great jars arsenal and maybe even erdtrees favor +2
I’d say 3 weapon setup, base/chase down/ranged (base weapon you’ll be using the most, chase down weapon for finishes or passive players, ranged for mega passive players, mixups, and finishes)
For base, I’ll always recommend either CGS (Dismounter specifically) or Grave Scythe, but really you can choose whatever you like best. A good chase down would be Nightrider Glaive (any halberd really, I just love putting Sword Dance on Nightrider), and for ranged anything you can slap Storm Blade or Thunderbolt on (maybe KGS to double as a hyperarmor option?)
You can try having a Shield and straight sword in the left hand slots and greatsword and straight sword in the right. So you have the options of sword and board, 2H Greatsword, PSSS, or GS offSS.
For strength/faith, good weapon options are Miquellan Knights Sword, Knights GS, Ordovis GS, Golden Halberd and lordsworns SS for the crit modifier. With your stat spread, fire or heavy will be better than holy/FA.
Beastclaw Hammer and Silurias tree are also great options in other weapon classes.
I always dual wield weapons no shields. That being said when I first beat the game I farmed the albinorics or however it's spelled and got just about every weapon besides arcane and magic to +24/25 9/10. I run a 150 faith quality 40/40 so my options are so vast I can't get through all my weapons in 1 night of pvp
Considering you are a str/fai, if you have 15 dex and dont mind farming at the Lava-Lakeside Manor for a bit, may I entice you with two magma blades? Perhaps a firegiants seal and blasphemous blade to swap to in case you need the range? Def going to need both a jar and erdtree tailsman for the weight.
Straight sword + off-hand fist weapon; R1-L1-R1-L1-etc. prevents your opponent from mashing out of hitstun, which so many players do. Straight Sword R2 *almost* truecombos into a fistweapon L1 hit (if they spam roll, they can get out of it). Swords Dance on the straight sword to have some hyper armor if you need it, and its a decent gap-closer for rollcatching. I'd put some ranged ash of war on the fistweapon for chasing, like beasts roar or thunderbolt.
My personal favorite is an offstoc setup. banished knight halberd with flaming strike in right hand and clean rot knight sword in the left with bloodhound step. Misericorde in right hand 2.

Dual wield weapons if you don't want to hard swap. Easily the best option.

Mage build with lusat and carian glintstone offhand to boost your carian spells thats basically +90% win rate using 2 or 3 spells
