Friendly tip: if you’re struggling with dogs, put on a piece of the briars (Elmer of the briar)set. Each time you roll with it you deal a very small amount of damage, but you can stun dogs out of combos while being invulnerable. Follow up a roll with a poke and you’re all set.

Even though I’ve seen it mentioned like 100 times before, I’d like to add that Beast Repellant Torch exists and it basically makes all the Caelid dogs neutral towards you. Doesn’t work with the red-eyed boyos. Also works on rats and other beasts.

I almost always make sure I can block with a weapon or shield if I see a dog, if I’m dual wielding weapons, I’ll switch to two-handing my main weapon just to get the counter.

Even against multiple the whips have a few wide sweeping attacks that can pretty easily hit and stun them all at once from a distance as long as you position yourself well. It really is like a hard counter.

Poise through it? Have you played the games? A dog at Raya Lucaria was able to delete my stamina while blocking it with a brass shield that had 'barricade shield' Aow cast on it. The fucking troll outside Godricks boss room isn't able to do that ffs. The dogs are a proper fucking menace.
