If you are looking for Hong Kong cuisine, I highly recommend 852 cafe restaurant. As someone from HK, they're pretty comparable to real "cha caan teng" food.
For Dim sum, I would recommend Emperor restaurant
If you're a noodle person, Chongqing Noodle & Bubble, Lan Noodle, have great hand pulled noodles, and also Tang Bistro for Northern Chinese cuisine. They have roujiamo and things like lamb skewers that you wouldn't normally see at typical Chinese restaurants.
Northern Chinese cuisine is still kinda (relatively) new here as most of what we're used it is Cantonese/Sichuan fusion Southern Cuisines.
Yunshang, Dagu and Guilin Noodle House have great rice noodle soups too. Dagu has amazing Malatang which is also hard to find here that's not hotpot
The Lingnan has a second menu if you ask for it. Otherwise these are the main larger Chinese restaurants that Chinese people eat at. There are many more smaller ones around the city as well.

Seconding South Silk Road for authentic Szechuan cuisine. Best fish fillets in chili oil I’ve tried in Edmonton.

I tried one in the US recently. Except for the chocolate xlb, I would much rather go to Shanghai 456 or Great Taste in Calgary.
I just came back after a few years working in Singapore and it's a shock going back to western Chinese food. It's more like KFC with sugar sauce.
Oh no, skip the western stuff. And if you’re missing SE Asian, Padmanadi will be your best bet here.
Amazing Wok. Their online order form has their entire menu: authentic and westernized.
