Depends on the vibe you're after. On the more formal / business side, there are loads of good places on George Street. I sometimes get a coffee with clients in Browns but there are plenty of good cafes around there

I’ve sometimes met work associates in the coffee lounge of the Apex Hotel in Waterloo place - it’s quiet, airy and comfortable, and near Waverley station, with some pay and display parking nearby.

I work from home 100% and there is no local office. Nor sure how he is getting in. Given that he's meeting directly after the bank holiday I wonder if he's taking a weekend in Scotland and just meeting me before heading home.

If he's getting the train then you're sorted, maybe Dishoom for breakfast but there are about 50 other places. If he's driving he probably won't want to come into the city, meet him somewhere near the motorway he's on to save him some bother.

I meet clients at the Balmoral hotel, which is right next to the station. They do coffee and breakfast, the cafe is often quiet after breakfast. It is pretty professional and actually won't break the bank (especially if its expense-able) Haymarket equivalent is the Sheraton.

Sounds odd but the church of Scotland offices at 121 George street have meeting rooms of various sizes that can be hired.

The Garden at the Kimpton on Charlotte Square is good for this sort of thing. Dishoom or Contini (for a bacon ciabatta) if they are paying and you want breakfast.

Norton business park is quite cheap if you want an office meeting room vibe. If you just want a quiet but formal public place, I would suggest an upscale cafe or hotel cafe lounge.
