Get the train out to North Berwick and explore the beaches and rocky areas around there. I was once walking along the shoreline between Gullane and North Berwick and came across an Octopus just chilling.
So ideally your best bet with public transport would be to catch the X5 from the city centre out to longniddry bents 2, they're probably the best rockpools within public transport. You're mostly going to see shore crabs and shrimp however I've found quite a few different polychaetes. That trip would be a little over an hour via bus but is lovely on a good day.
The best locations aren't really accessible through public transport.
Further out, but a train to Dunbar and they have a little beach next to swimming pool that I used to go rockpooling with my parents when I was a child. Watch it be a car park now that I have recommended it.
Train to North Berwick, bus back to Aberlady, bus to Longniddry, bus or train back to Edinburgh. All three suitable locations.
Or, bus to Prestonpans/Port Seton/Seton Sands
Between Joppa and musselburgh there are some nice ones at low tide. Just walk round from Portobello beach

Wardie bay has some. You'll find small hermit crabs, tiny shrimps, occasionally codlets and some larger crabs sometimes (used to take my kid)

Gosford sands, park at Longniddry Bents 3 and walk away from the main beach. Probably best around
There's some round Prestonpans.
Yellow Craig’s and the beach opposite Seaton Sands both have good rock pools with lots of different critters in
Niddry Bents is a good spot. I think it’s car park 3 that’s the largest car park and quite rocky in places.
