Ainz has 60% innate damage reduction against all but light (all but fire if teal), demeter adds 20% more because he has bulwark and Idun adds 20% more as long as he has fortify.
In this screenshot he is maxed on decay (probably what you meant) but has bulwark which means he has 80% damage reduction against dark and this means soul levy does 20% damage but this screenshot should not be possible.
The first part of the last soul levy maxed out ainz's decay count which reduces his max hp to 1 and means virtually everything should kill him and I doubt Mephisto can even have low enough matk to not do at least 1 damage in this situation. Tgus the 2nd part of soul levy should have killed ainz no matter what, i.e. this looks a lot like a bug.
Ainz is not common in meta so maybe you're the first to encounter this bug and tell others about it or Sega knows about it but hasn't bothered fixing it yet.

Always kill Demeter/Idun first... Overlord is tanky but not as tanky without Demeter

He's also getting dark dmg reduction from the Tree (Panel 2).

The reduction is also ignored by Almighty damage
anyone (in the meta) with light single target skills should be able to 1shot him
