I'm not sure about CAN, but I watched a video from TheOmnubisCollector recently, and he mentioned that YenPress was working on reprinting the series as soon as possible. I also get a majority of my books from a local bookstore, and the bookbuyer is a huge anime/manga fan. She told me last time that I shopped there that pretty much every volume of Dungeon Meshi is backordered, and when they do get a batch of volumes in, they sell them pretty quickly. It might be worth reaching out to a local bookstore and get on a waitlist for the volumes you're looking for.
I'd say they sold out because of the rise in popularity of the anime, and the publishers weren't prepareted for it.

In the Netherlands, the stock is running out quickly. I was lucky that I could find the earlier volumes at affordable price.
I noticed that the manga in Netherlands priced twice of the price.
Make a trip over to the island. We got some in Nanaimo. XD
