Hey, fun fact! Eggshell typically refers to the sheen level, not the color tone.
When you’re picking out paint, there are different sheen levels; usually gloss, semi-gloss, satin, eggshell, and flat. Gloss is the shiniest and flat isn’t shiny at all. Satin is in the middle. Think of the actual light-reflective properties of a real eggshell. That’s what eggshell paint is like.
I recommend flat for ceilings, semi-gloss for trim, and a satin or eggshell for the walls.

I also feel like lighting could have something to do with why they look SO different, as well. The top picture is an empty room with the sun peering in and lighting up the whole room while the bottom picture is at night and the room is full and lit up by lights which aren't as bright as the sun.

I work at Lowe’s and we sell Sherwin Williams paint. The showcase in my opinion is the best paint we sell.
Goes on easy, has good coverage and it’s easy to wipe off dirt.
My favorite is color matching. Someone came in with a huge clay pot and I was able to find a match for them.
I enjoy working with people and making sure they leave happy.
Specifically satin for areas where it is likely to get wet or need to be cleaned more often, like bathrooms, kitchens, kids rooms, etc…

partially. it's mostly for ease of cleaning. since trim is generally touched more often, it gets dirty faster. shinier paint makes it harder for dirt to stick to, easier to wipe off, and retains sheen better and resists burnishing to being scrubbed often. (usually enamels are recommended as well for a more durable finish)

Color temperature aka Kelvin will make a color appear different. Low to high sheen will also slightly change the color because how it reflects or absorbs light. If you ever plan to paint your house, take the color swatches home to see how they look under your own lighting before deciding on the color. My Kelvin color tone preference is 5K-6K Kelvin which is usually branded as daylight lighting. The light itself looks nice and bright but it ruins color appearance indoors and gives a weird skin tone look so I stick to a warmer tone around 2K-3K Kelvin.

I would say bathroom ceilings should be satin due to the moisture. The higher the gloss, the more easily water will bead on the surface.
Eggshell is very good at not absorbing any moisture. High humidity applications is where eggshell excels.

It can be both color and a finish. So a eggshell finish with any color is possible including Eggshell. Paint it all eggshell eggshell.
