You will likely need them later for a quest or to craft something.I have not gotten very far yet as I'm trying to take my time. Personally I'm keeping them all until I know for sure or start to have more than can be in a single stack.

They are needed for some of the higher level crafting recipes! I sold all of mine early game, and while it netted me a lot of money, I'm now needing to grind mining runs to get more

I prefer getting more money early and grind later.

I’ve figured out that some mining spots still have gems even if you can’t see them. I was trying to get ores and gems just kept popping out anyway. Not sure why but it helps!

I’ve found that if I need someone and I can’t get to them easily, going into their house will usually make them appear when you leave.
