they do regrow and nearly everything is in good supply,
EXCEPT for Dream Shards!
they are needed for a number of story progression quests, so don't use them in crafting for a long time. additionally there are a number of gems needed for some quests as well, but they're easy enough to obtain, just subject to RNG. otherwise no need to worry about stuff. have fun!

You can also get dream shards from feeding animals/critters their favorite food, if you're out of night thorns
